This bowl of goodness is filled of organic, nutritious, delicious and nourishing ingredients. All combined to nourish your body and also to keep you strong and healthy during the cold months of the year.
Warm and healing spices like garlic, cumin seeds and ginger were also added to this magic bowl. Garlic and Ginger are great anti inflammatory ingredients which helps preventing cold and stimulates circulation of the blood in our body. Plus they will also keep you warm! Cumin seeds improves immunity, helps healing and respiratory disorder, common cold, bronchitis and asthma.
A combination of greens and root veggies are also part of this incredible meal!
I had the soup served with brown rice, but you can replace it with quinoa or noodles.
Oil Free and no added salt.
1 Litre of Natural and organic Veggie broth (you can make your own or you can buy from your local health food store). Add more water if needed.
1 Brown onion diced
3 garlic cloves minced
1.5cm Ginger minced
2 Carrots chopped
1.5 Broccolis chopped
2 Celery sticks chopped
8 Brown mushrooms halved
5 Big Kale leaves chopped
Wakame sea vegetable
4 Cups of cooked rice to serve the soup with
ADD Veggies broth and vegetable with the exception on kale, parsley and wakame in a big pot under medium to high heat.
COOK them all until tender, approximately 15 minutes.
ADD the chopped kale to the soup. Cook it for about 5 minutes
PREPARE the wakame in a separate bowl. All you need to do is to add enough boiling water to cover the wakame. You don't need much of it, a little bit goes a long way. The taste of wakame is quite strong for some palates, make sure you try some before you add them to your plate.
ADD the veggie soup over some warm rice and topped them up with the wakame and fresh parsley.
Feel free to add more water if needed.
