Mac & Cheese - Vegan


Serves 4

250gm Rice pasta

1/2 Cup frozen pea

1.5 Cups broccolis florets

1 Big potato diced

2 Carrots chopped in small pieces

1 Cup chopped pumpkin

1/2 tomato chopped

3-4 Cups of water

2 Garlic cloves diced

1/2 Onion diced

3 Tablespoon of nutritional yeast

1 Tablespoon lemon juice

2 Tablespoon of tamari

1 Teaspoon of smoke paprika

1 Teaspoon of oregano

Salt and Pepper to taste

COOK the onion, garlic, potatoes, pumpkin, carrots and 2 cups of water until vegetable are all soft (add more water if necessary)

COOK pasta as per instructions

STEAM peas and broccoli florets until soft

BLEND the vegetable mixture with all the other ingredients except for the oregano.

PUREE everything

You can add more or less water to achieve the creaminess that you desire. The more water you add less intense the flavour will be.

ADD broccolis and peas to the cooked pasta

POUR sauce over the pasta

SIMMER for 3-5 minutes

ADD more salt and pepper if you desire

SPRINKLE dried oregano over it and serve it.
